Cajun Dijon Grilled Pork Tenderloin (serves 4-6)

                              1 cup Dijon mustard

                              1 orange, juiced (1/3 to 1/2 cup juice)

                              3 Tbsp Creole/Cajun seasoning

                              1 1/2 lb pork tenderloin


Whisk together dijon mustard, orange juice and creole seasoning.


Place pork in a ziplock bag and pour mustard mixture over pork. Seal bag and refrigerate at least 30 minutes.


Remove pork from marinade and grill for 10-12 minutes per side, until temperature is 155 degrees. Let stand 5 minutes before slicing.  Tip:  You can use this recipe on poultry and/or seafood

 Serve over Rice and Roasted Vegetables

1/2 cup Brown Rice or Quinoa and 2 Cups Roasted Vegetables
