Make night Before: This is one serving.   I make a few of these at a time in small to go containers.  Keep refrigerated

      ¾ cup coconut milk or Almond Milk (Unsweetened)

                  1 tablespoon chia seeds

                  1 TBSP Hemp Hearts

                  handful of slivered almonds, and unsweetened coconut flakes

                  for sweetener a mix of xylitol and erythritol (Approx. 1 tsp. total)                  

                  ½ teaspoon vanilla extract                 

Mix all of the ingredients in a jar.

                  Put a lid on and place in the fridge to let gel over night or for at least 4 hours.

                  Serve the pudding with some additional coconut milk or some fresh or frozen berries.


Try adding some cinnamon, cardamom, unsweetened cocoa powder, matcha tea or nut butter to your chia pudding for a different flavor.
