This was inspired by a dish I get at Madison Cafe in Albany!  SO GOOODD! You can make this the night before and take to work with you and reheat or eat cold. 


6 Eggwhites

1/2 cup Coconut Milk or Skim Milk

1/4 cup grap tomatoes sliced in half

1/2 cup chopped cooked zucchini or yellow squash

1/4 cup Red onions

1 ounce feta

fresh basil

Whisk egg whites and coconut milk together.  Season with salt and pepper.  Pour into large sprayed skillet and cook on medium-low heat.  Choose a skillet that can be put into the oven direct from stove. 

Begin to add in other ingredients, spreading out evenly.  cook about 3-4 minutes and put in oven at 375* approx. 20 minutes or until mixture is dry and slightly bowled. 

Top with fresh basil
