This recipe makes 6 muffins.  1 = 185 calories, 13 grams of fat 10 protein and only 5 carbs. You an add a scoop pf protein powder for a little extra protein.

Note*  Flaxseed Meal, Psyllium and Hemp are high fiber foods.  That is why the serving size is 1 in this recipe. You will also notice its a little higher in the fat departments so be careful with dressing choices later and what you are cooking with.  

1 cup Golden Flaxseed Meal or Psyllium Husk or Hemp Meal
1/4 cup Cocoa Powder
1 tbsp. Cinnamon
1/2 tbsp. Baking Powder
1/2 tsp. Salt
1 large Egg
2 tbsp. Coconut Oil
1/2 cup Pumpkin Puree
1 tsp. Vanilla Extract
1 tsp. Apple Cider Vinegar
1/4 cup Slivered Almonds

Preheat your oven to 350°F and combine all ingredients in a deep mixing bowl and mix to combine.  First the dry ingredients, then the wet.
Line a muffin tin with 6 paper liners and spoon about ¼ cup of batter into each muffin liner.
Sprinkle slivered almonds over the top of each muffin and press gently so that they adhere.
Bake in the oven for about 15 minutes. You should see the muffins rise and set on top.
