Makes 4, wrap them up and take them with you for lunch during the week or use as a snack.


2 Cups Egg Whites

1/2 cup Non-fat Cottage Cheese

1/2 cup chopped tomatoes

1/2 cup Red or Green Pepper chopped

1/2 cup Red Onion

1/2 cup Black Beans

4 Small Ezekiel Tortillas or Whole Grain Tortillas

In a bowl whisk eggs whites,  cottage cheese and salt and pepper.  Coat a skillet with olive oil spray and salute vegetables and beans until soft.  Pour egg mixture over it and cook until mixture sets. Once firm, divide into 4 sections and roll each into burrito.
