Baked Pesto Salmon: 4-5 servings

                  2 lbs salmon

                  2 oz. green pesto

                  salt and pepper

Green Sauce:

                  2 oz. green pesto

                  1 cup low-fat mayonnaise

                  ½ cup greek yogurt

                  salt and pepper

                  Place the salmon skin-side down in a greased baking dish. Spread pesto on the salmon, and salt and pepper to taste.

                  Bake in oven at 400°F (200°C) for about 30 minutes.

                  Meanwhile, stir the sauce ingredients together; pesto, mayonnaise and yogurt.

 

Serve with steamed broccoli or a hearty salad.  This is a great way to prepare a dinner for friends or a larger family that doesn’t take any time at all.  If it’s just for you cut down on the portion of salmon.  Make the green sauce as is and use it the next day for your eggs!  Delish!!
